Bharva Aloo (Without Stuffing)
Ingredients
Oil - 1 tablespoon
Cumin seeds/Jeera - 1 teaspoon
Potato/Aloo - 2 to 3 no boiled
Coriander leaves - 1 to 2 cups chopped
Fresh coconut/Nariyal - 2 tablespoon grated
Roasted peanut powder - 2 tablespoon
Sugar - to taste
Salt - to taste
Red chili powder/Lal mirch powder - 1 teaspoon
Coriander seeds powder/Dhania powder - 1 teaspoon
Roasted cumin seeds powder/Jeera powder - 1 teaspoon
Turmeric powder - a pinch
Lemon juice - of 1/2 lemon
Oil - 1 to 2 tablespoon
Instructions
1. Heat the oil in a wok/kadhai. Put cumin seeds. Cut the boiled potato into 2 to 3 pieces. Add the potato pieces. Saute well and cook for 2 to 3 minutes.
2. In a bowl, take the chopped coriander leaves. Put the grated fresh coconut, roasted peanut powder, sugar to taste and salt to taste.
3. Then, put the red chili powder, coriander seeds powder, roasted cumin seeds powder, turmeric powder, squeeze lemon juice of half lemon. Add oil and mix with spoon. The masala is ready.
4. Add the masala to the potato in the wok. Mix well with light hands. Cook for 1 to 2 minutes.
5. The Bharva Aloo (Without Stuffing) is ready to be served.
Bharva Aloo (Without Stuffing) is an innovative dish.
Bharva Aloo (Without Stuffing) is a different type of aloo sabji. It is an easy version of the stuffed/bharva aloo dish. Moreover, it is a no onion no garlic dish. The masala preparation imparts flavor and makes it a colorful and aromatic dish. It tastes great with hot roti or phulka. The masala requires coriander leaves, peanut powder, fresh coconut, red chili powder, sugar, lemon juice. Thus, it becomes a spicy, sweet and tangy mixture. Tips and Suggestions by Mom Chef:-
In place of fresh coconut you can use desiccated coocnut.
After roasting the peanuts, grind them to make powder.
Putting the oil in the masala, helps all the ingredients to mix well.
If you want, you can skip dry coconut or peanuts powder.
