Preparation Time : 10 Minutes Cooking Time : 45 Minutes Servings : 5-6 Author : The Recipe Nest Cuisine : Non-Vegetarian Ingredients : Rice - 500 Grams Mutton - 500 Grams For Yakhni Preparation : Mutton - 500 Grams Onion - 1 Medium Garlic Pods - 2 Small Ginger - 2 Inch Piece Sabut Dhania (Coriander Seeds) - 2 Tsp Sabut Zeera (Cumin Seeds) - 2 Tsp Saunf (Fennel Seeds) - 2 Tsp Badi Ilaichi (Black Cardamom) - 5 Nos. Hari Ilaichi (Green Cardamom) - 5 Nos. Sabut Kali Mirch (Black Pepper) - 8 to 10 Nos. Laung (Cloves) - 5 to 6 Nos. Dal Chini - 1 Piece Jaiphal (Nutmeg) - Small Piece Water - 1 Litre For Frying : Chopped Onions - 3 Medium Tez Patta (Bay Leaf) - 3 Nos. Laung (Cloves) - 4 to 5 Nos. Badi Ilaichi (Black Cardamom) - 4 Nos. Hari Mirch (Green Chillies) - 2 Nos. Ginger Garlic Paste - 1 Tbsp Dahi (Curd) - 2 Tbsp Hari Ilaichi Powder - 1/2 Tsp Salt - 4 Tsp or As Per Taste Method : 1. Soak 500 Grams Basmati Rice in water for approx 30 Minutes 2. Put Mutton in a Pressure Cooker 3. Add one Onion cut into two, Ginger, Garlic Pods, Sabut Dhania, Sabut Zeera, Saunf, Badi Ilaichi, Choti Ilaichi, Kali Mirch, Laung, Dalchini, Jaiphal, and add Water 4. Close the Lid of the cooker and Cook for 5 Minutes on low flame After One Whistle 5. Open the Lid after the pressure is released 6. Your Yakhni is Ready (Check with Knife If Mutton is Tender) 7. Separate Mutton Pieces from Yakhni 8. Use a Strainer and Separate Yakhni Broth in a Bowl 9. Heat Oil in a separate Vessel 10. Add Tez Patta, Badi Ilaichi, Laung, Hari Mirch 11. Add Onions and Fry till Golden Brown 12. Add Mutton and Ginger Garlic Paste and Fry for 2-3 Minutes 13. Add Dahi and Fry for another 2 Minutes 14. Add Separated Yakhni Soup and Bring it to a Boil 15. Add Hari Ilaichi Powder 16. Add the soaked Rice after Removing excess Water 17. Mix it gently and add Salt as per Taste 18. Cover the Lid and Cook for 7-8 Minutes on Low Flame or till the Rice is Cooked 19. Add Some Natural Food Color and Cook for Another 2 Minutes on Low Flame 20. Yakhni Pulao is Ready 21.
