Hyderabadi Bagarey Baingan, A delicacy of Hyderabadi Cuisine.Try this tasty Eggplant recipe using classical Hyderabadi masalas.I will share with you an easy method of how to make this tasty curry eaten with Biryani or rice.
INGREDIENTS
Groundnuts/Peanuts - 2 tablespoon roasted
Sesame seeds - 2 tablespoon roasted
Cumin seeds - 2 teaspoon roasted
Coriander seeds - 1 teaspoon roasted
Coconut powder roasted - 2 tablespoon
Onion fried in little oil - 1 medium sized
Eggplant or brinjal - 12
Mustard seeds - 1 teaspoon
Fenugreek seeds - 1/4 teaspoon
Ginger garlic paste - 1 teaspoon
Cloves - 2
Cardamom - 1
Cinnamon sticks - 2
Tomato - 1
Turmeric powder - 1/2 teaspoon
Red chilli powder - 1 1/2 teaspoon
Tamarind juice - 1 cup
Curry leaves - few
Green chillies - 5
Coriander leaves - few
Oil - for deep frying
Oil - 4 tablespoon for cooking
Salt - as required
METHOD
1.Grind these ingredients
Groundnuts/Peanuts - 2 tablespoon roasted
Sesame seeds - 2 tablespoon roasted
Cumin seeds - 1 teaspoon roasted
Coriander seeds - 1teaspoon roasted
Coconut powder roasted - 2 tablespoon
Onion fried in little oil - 1 medium sized
2.Make cuts on eggplant and deep fry them.
3.In a pan add four tablespoon oil to this add cumin seeds.mustard seeds,fenugreek seeds,cloves
cardamom,cinnamon,turmeric powder and ginger garlic paste.
4.Fry them well, then add the ground paste,salt and red chilli powder and cook till oil
appears on sides.
5.Then add tamarind juice and three cups of water and cook till raw smell of tamarind disapears.
6. Add fried brinjal/eggplant , curry leaves,green chillies and coriander leaves.
7.Cook for 5 minutes and the curry is ready.
8.Serve it with biryani or rice.
