Baked Thekua| Quick & healthy snack| khajur recipe| Bihari thekua recipe| ख़स्ता ठेकुआ रेसिपी Thekua is a traditional deep-fried sweet snack from Bihar made from whole wheat flour (atta). Our thekua recipe results in a crumbly, wholesome cookie or biscuit that is also very popular in Jharkhand, West Bengal, eastern Uttar Pradesh. Thekua is also called khajoor, khajuria, khasta, thekari, or thokwa. Preparation time:- 10 min Cooking time:- 12-15 min Serves:- 12 pieces 1/2 cup whole wheat flour/ atta 1/2 cup Buckwheat flour/ kuttu atta 2 tbsp Sooji/ semolina 1/4 cup jaggery powder 1/4 cup or 3 tbsp Ghee 3 tbsp milk (room temperature) 1 tbsp Desiccated coconut 1 tsp TIL/ sesame seeds 1 tsp fennel seeds/ saunf 1/2 tsp Cardamom/ elaichi powder Broken nuts ( cashew/ pista) I have lot of childhood memories and emotions connected for this recipe. Thekua is made during any auspicious occasion like holi, Diwali especially Chaath pooja. If you are going out to study in college away from family or going out to do job or if you are going for long trips or long journey, one Dabba will definitely go along with you that is “Thekua”. The trick to make crumbly thekua is getting dough of right consistency. Dough should be stiff and quite hard. Soft dough will result in soft, non-crumbly poori like thekua. Thekua becomes harder and crispier as it’s cool down. Once cooked completely, pack it in and air tight container and store in cool, dry place. It keeps well for up to month.
