A crunchy and chatpata plate from the chaat genre
Ingredients
For ragada/ gravy
Fresh green peas boiled 1cup
Onion paste 1/4cup
Tomato puree 1/2cup
Oil 2 tbsp
Fresh coriander 1/2cup
Mint 1/4 cup
Green chilli 3-4 nos
Garlic 3-4 flakes
Ginger 1 inch
Cumin powder 1/2 tsp
Red chilli powder 1/2 tsp
Garam masala 1/2 tsp
Tamarind extract 2 tbsp
Salt to taste
For Patties
Boiled & mashed potatoes 3 nos
Bread slices 4 nos
Cumin powder 1/2 tsp
Red chilli powder 1/2 tsp
Garam masala 1/2 tsp
Salt to taste
Oil to roast
For serving
Sweet chutney
Finely chopped onions

Method
For Ragada/ Gravy
Firstly make a paste of coriander, mint, garlic, ginger and green chilli
Heat a pan, add oil and saute onion paste & tomato puree
Now add boiled green peas and cook further
Add the paste to the pan along with cumin powder, garam masala, tamarind extract, red chilli powder and salt to taste
Continue cooking and bring the gravy to a medium consistency
For Patties
Take a bowl, add boiled & mashed potatoes and bread crumbs
Note: blend the bread slices into powder without adding water
Add cumin powder, chilli powder, garam masala and salt to taste
Mix well and make small patties
In a frying pan, drizzle some oil and shallow fry the Patties on medium flame until golden brown on both the sides
For Plating
Take a serving bowl/ plate, place the Patties, pour the hot gravy and top it with sweet chutney
Sprinkle cumin powder, chilli powder, salt and finely chopped onion. Garnish with sev and fresh coriander
Ragada Patties is now ready to eat
