Spicy Venison Shank Curry is another of my original recipes for which I have taken inspiration from the Italian Ossobuco recipe. Ossobuco means "bone with a hole" in Italian and refers to the cross-cut shank or leg. I have used Venison or Deer shanks for this recipe for its rich gamey flavour that goes extremely well with the aromatic spices I have used for this recipe. This is a rich, robust curry & a perfect winter warmer. I have added a bit of goat fat/suet as well to the dish to give it some richness as venison is lean meat. There are some super speciality Indian spices used in this recipe. You may choose to omit a few of them, the taste would still be good. Below is a list of the spices used in this Venison Ossobuco Curry recipe: 2 Cassia Bark Sticks 8-10 Cloves 8-10 Green Cardamoms 2 Black Cardamoms 1 Mace Blade 1 Tsp. Black pepper Corns A bit of Dagad Phool or Kalpasi (optional) 2 Dry Red Chillies 3 Bay Leaves 1 Nutmeg Coarsely Ground 2 Tsp. Turmeric & Coriander Powder 1 Tsp.
