Ingredients:
1. 1 Litre A2 Cow Milk or any milk of your choice
2. 200 gms Mishri or any sweetener of your choice
3. 1 spoon lemon or citric acid or vinegar
4. ½ spoon cardamom powder
5. Chopped dry fruits (any dry fruit based on the availability). I have added almonds and pistas.
Preparation Method:
1. Heat the milk in the large thick bottomed pan
2. Heat the milk in medium flame and stir occasionally
3. Once the milk is boiled, add 1 Cup Mishri organic sweetener, you can use the sweetener of your choice. I am adding it the moment milk is boiled slightly because mishri takes time to melt. If you are using sugar then you need to add once the milk is boiled to half of his quantity
4. keep stirring in between till the milk reduces and thickens completely.
5. Simmer the milk until one third of its quantity
6. You must have seen that milk cake is ideally grainy in texture. To prepare that grainy mixture, add lemon juice to the simmering milk. Eventually, you will notice that the milk will curdle separating the water. Now, stir the milk well and cook the mixture till it is light brown in colour and grainy in texture.
7. Now add cardamom powder and mix well.
8. Transfer the kalakand to a bowl and wait until it cools down and come to room temperature
9. once it is cooled completely, separate the sides with the knife.
10. finally, cut the milk cake kalakand into pieces and garnish with chopped dry fruits
