Kalathappam is a very famous and traditional sweet dish from Kerala. India. it was traditionally done in a mud pot. But now a days its commonly cooked in a pressure cooker.. Lets see how this will done in Pressure cooker...
Ingredients
Raw Rice - 1 1/2 Cup
Jaggery - 350 gm
boiled rice - 1/2 Cup
Coconut flakes - 2 spoon
shallots chopped - 1 tbsp
cardamom powder - 1 tsp
Baking Soda - 1/4 tsp
Salt - 2 pinch
ghee - 2 tsp
Water for grinding rice - 1 1/2 Cup
Water for Jaggery Syrup - 1/2 Cup
Soak Rice for 4 hrs. Grind this with 1 1/2 cup water and 1/2 cup boiled rice.
add cardamom, salt and baking soda to this batter and mix well. Melt Jaggery with 1/2 cup water, Take a pressure cooker below 5 ltr capacity will be fine... Heat cooker then add ghee, coconut, shallots.. Add the hot Jaggery syrup to Rice batter, add slowly with one hand and mix very fast with your other hand.. Now the batter should be a bit hot..
Pour this to the cooker, as showed in the video.. cover lid without cooker weight. keep low flame.. after 5 minutes, steam will start to come.. wait 5 more minutes, then open and check with a stick. if its not done, keep lid and wait for 2-3 minutes...
Cooking time will vary upon your cooker size and thickness of the kalathappam you make.. Once its done.. wait to get cool.. then transfer to a place ..Enjoy this sweet recipe as a breakfast item , Brunch or as tea time snack.. Enjoy...
