Easy and delicious, balsamic pork tenderloin sheet pan dinner! This recipe has been a regular favorite for us for at least 3 years, and we love it every time! Sometimes I roast potato slices or wedges at the same time, and sometimes I switch out the green beans for broccoli or another vegetable, but it’s always yummy and comes together quickly! The marinade is strong enough that if you can only let it sit for 30 minutes, you will still get the yummy flavor (although several hours is best), and it’s pantry items that you almost certainly have on hand! In fact, if you don’t have balsamic vinegar you can make your own substitute with apple cider vinegar and brown sugar (I’ve done this several times with great success!) Give the recipe a try, and let me know in the comments below how it turns out or tag me @househackingmom! Recipe: 2-3 lbs pork tenderloins 4 TBS balsamic vinegar 3 tsp kosher salt 1/2 tsp fresh cracked black pepper 2 TBS Dijon mustard 2 TBS olive oil 2 TBS brown sugar ~1 TBS fresh rosemary chopped ~2 tsp garlic minced (4-6 cloves) Directions: Combine above ingredients in a large, resealable bag removing as much air as possible and let sit in refrigerator for a few hours or up to overnight. -my personal favorite level of flavor is about 3-4 hours- Preheat oven to 450 degrees and adjust oven rack to middle position. Line a sheet pan with foil and grease with cooking spray. Optional -Toss 1 lb of green beans (or another vegetable with similar cooking time frame) in a little olive oil, salt and pepper and spread around perimeter of sheet pan. Place tenderloins in center of sheet pan. Leave space between the loins, tie over the small ends to promote even cooking. Discard marinade or cook in a small saucepan to serve on the side. Bake 20-25 minutes until pork registers 140 degrees. Remove pork from sheet pan and let rest under foil for ~10 minutes before slicing. Check green beans for doneness at 20 minute mark and remove from sheet pan if the pork still needs a few minutes to finish cooking. #sheetpandinner #easydinnerrecipe #porktenderloinrecipe
